Nose
Green apple and lime zest lead, with a soft white peach note underneath and a faint wet stone edge that keeps it lifted.
Palate
Light bodied and off dry, with bright acidity that carries green apple and lime up front, then white peach through the middle. A chalky mineral thread runs underneath, keeping it crisp rather than syrupy.
Finish
Clean and fairly short, with lime and a whisper of stone lingering before it fades dry.
How to serve and what to pour it with
Serve well chilled, around 45 to 50 degrees, in a small white wine glass so the aromatics stay focused. No ice, it dilutes the acidity. A slight chill is the point, so keep the bottle in an ice bath between pours. Drink it young and fresh, not cellared.
