Nose
Green apple and pear skin first, then a clean citrus lift, lemon zest mostly, with a faint almond note underneath. Nothing heavy, nothing sweet.
Palate
Light bodied and brisk, green apple and white pear across the front, a squeeze of lemon and lime in the middle, then a stony mineral edge. Acidity stays bright and carries it, no oak, no sweetness.
Finish
Clean and dry, short to medium, with the citrus fading last and a little wet stone left behind.
How to serve and what to pour it with
Serve it cold, around 45 to 50 degrees, in a small white wine glass so the aromatics stay tight and the chill holds. No ice, it dulls the fruit. Pull it from the fridge about ten minutes before pouring and keep the bottle in a bucket if you are outside. Drink it young, this is not a bottle to cellar.
