How to Choose Riesling: A Long Island Buyer's Guide

Riesling is a white grape that most wine drinkers think they know and often do not. It is almost never oaked, it is famously high in acid, and its sweetness swings from bone-dry to dessert-level. That range is the point: no other white grape translates terroir so transparently. If you are building a mixed case, treat riesling as the counterweight to richer bottles like chardonnay and structured reds such as cabernet.

Start With the Sweetness Scale

German labels are the key to understanding riesling. Look for these terms on the bottle:

  • Trocken: dry, usually under 9 g/L residual sugar. Crisp green apple and citrus.
  • Halbtrocken or Feinherb: off-dry, a touch of roundness that tames the acid.
  • Kabinett: light-bodied, picked early, often dry to off-dry.
  • Spätlese: late-picked, riper fruit, sweeter but still balanced.
  • Auslese: selected late harvest, dessert-leaning with honeyed stone fruit.

Alsace in France labels by producer rather than ripeness, and its rieslings are typically dry and fuller-bodied. Washington’s Columbia Valley sits between the two: ripe fruit with firm acid.

What to Expect in the Glass

Classic markers are lime zest, green apple, white peach, jasmine, and a mineral, slate-like finish that comes from steep vineyard soils. Young rieslings can show a petrol or kerosene note, which is a sign of quality and aging, not a fault. Alcohol is usually low, often 8 to 12 percent, which makes it one of the most food-flexible wines you can stock.

Pairing and Serving

  • Dry riesling: oysters, sushi, Thai and Vietnamese dishes, roast chicken.
  • Off-dry riesling: spicy Korean and Indian food, pork with fruit, salty cheeses.
  • Sweet riesling: blue cheese, fruit tarts, foie gras.

Serve dry styles at 45 to 50 degrees Fahrenheit and sweeter styles a few degrees colder. Skip the oak-aged treatment entirely; riesling does not want it.
