Nose
Raisins and dried figs first, then a thread of orange peel and a dusting of cinnamon and clove. Toasted oak sits underneath, not shouting.
Palate
Medium weight, silky and round. Sherry sweetness leads with dates and golden raisins, then malt and a gentle nuttiness. Spice builds midpalate, clove and a touch of ginger, before oak dries it slightly.
Finish
Warm and lingering, dried fruit fades into soft oak and a last flicker of spice.
How to serve and what to pour it with
Neat at room temperature in a tulip glass or a copita, not a tumbler, so the sherry aromas gather instead of drifting off. A few drops of water open the malt and soften the oak. Let it sit a minute after pouring before you nose it. No ice, it shuts down the dried fruit.
