Nose
Sweet malt and honeyed orchard fruit first, then earthy wood smoke, dried citrus peel, and a faint wisp of peat.
Palate
Round and mouthfilling, honeyed pear and baked apple up front, a thread of sweet malt, then wood smoke builds gently without burying the fruit. Soft spice on the midpalate.
Finish
Long and warming, dried orange and lingering earthy smoke, with a return of malt sweetness.
How to serve and what to pour it with
Neat at room temperature in a tulip glass, or a rocks glass with a splash of cool water to open the fruit and soften the smoke. A single large ice cube works if you want it colder. Let it rest a minute after pouring before you nose it.
