Nose
Dark cherry and dried plum lead, with raisin and a dusting of cocoa. Sweet spice, like clove and a hint of cinnamon, lifts the fruit.
Palate
Full bodied and dry, with rounded tannins that grip gently. Concentrated black cherry and plum, then raisin and cocoa, finishing with warming spice. Acidity keeps it from feeling heavy.
Finish
Long and warming, echoing dried fruit and cocoa, with a tannic tug that invites another sip.
How to serve and what to pour it with
Serve at cellar temperature, around 60 to 65 degrees, in a large Bordeaux glass. Decant for an hour to soften the tannins and open the nose. Pour a modest glass, since the wine is full and warming. A small splash of water can tame the alcohol if you prefer.
