Maestro mezcalero Don Baltazar Cruz Gómez roasts mature Espadín agaves for several days in a conical earth oven, crushes the smoky hearts with a stone tahona, ferments the juice naturally in open-air pine vats, then double–distills in small copper pot stills to a crystalline 47 % ABV. The result is a spirit whose aromatics leap from the glass: sun-ripened pineapple, green mango, baked clay and citrus zest entwined with a seductive wisp of campfire smoke. On the palate, silken texture carries flavors of roasted agave, cacao nib, white pepper, and sweet herbs, finishing long, mineral, and impeccably balanced. Every 750 mL bottle is bottled unblended and unfiltered, capturing the rustic elegance that has made Alipus a touchstone for authentic craft mezcal.
