Nose
Dried cherry and wild strawberry first, then cedar, vanilla and a distinct dill note from the barrels, with a wisp of leather.
Palate
Medium bodied and silky, resolved tannins. Red cherry and dried strawberry lead, followed by vanilla, cedar, leather and that savory dill edge. Acidity keeps it fresh.
Finish
Long and mellow, echoing dried red fruit, cedar and a soft leathery note that lingers gently.
How to serve and what to pour it with
Serve slightly cool, around 60 to 65 degrees, in a standard red wine glass. No decanting needed, but a short rest in the glass opens the dill and cedar. Pair with roast lamb or mushroom dishes. Drink now or hold a few years.
