Nose
Ripe pineapple jumps out first, juicy and a little candied, with a dusting of cinnamon riding on top and a faint cooked agave sweetness underneath.
Palate
Round and lightly syrupy, sweet up front with pineapple that tastes more like grilled fruit than candy, then cinnamon warms the mid palate. Agave stays quiet but present, keeping it from going full cocktail.
Finish
Medium length, drying slightly, cinnamon lingering with a soft pineapple sweetness that fades clean.
How to serve and what to pour it with
Chill the bottle well, then pour neat into a small tumbler over one big cube so the sweetness stays in check. For a highball, add fresh lime and soda, the acid tightens the pineapple and keeps the cinnamon from cloying. A lime wheel expressed over the top helps either way.
