Nose
Opens with warm caramel and toasted coconut, then a soft tropical fruit note, like dried pineapple, and a faint floral funk from the coconut flower toddy.
Palate
Round and lightly sweet, with toffee and caramel up front, a midpalate of coconut and stone fruit, and a gentle spice that builds without heat. Softer than molasses spirits.
Finish
Lingers with soft baking spice and a whisper of caramel, medium length, clean and warm.
How to serve and what to pour it with
Serve neat at room temperature in a small tulip glass to gather the coconut and caramel aromas. A splash of water opens the tropical notes. For a cooler drink, pour over one large cube, which tames the sweetness. Sip slowly; the funky depth grows as it sits.
