Nose
Toasted oak leads, then vanilla bean and a caramel note that smells like it was cooked just past golden. A little dried fig and faint clove sit behind.
Palate
Full and round, with a soft oiliness that carries the oak and caramel across the tongue. Dried apricot and raisin come forward mid palate, then a gentle spice prickle on the sides.
Finish
Warm and lingering, with the dried fruit fading slowly and a last whisper of toasted oak and sweet spice.
How to serve and what to pour it with
Pour neat at room temperature in a tulip glass or a small snifter, letting it sit a minute to open. A drop of water softens the oak if you want it rounder. Skip ice unless you want to mute the fruit. Warm the glass in your hand, not on a flame.
