Nose
Ripe plums with a faint almond skin, clean and direct, not perfumed. A little stone fruit sweetness, then a dry mineral edge.
Palate
Medium weight, silky at first, then a firm tart plum skin grip. Warming spice builds midpalate, clove and white pepper, finishing dry with a clean bitter almond note.
Finish
Long and warming, the tart plum fades slowly into a dry almond pit bitterness that invites another sip.
How to serve and what to pour it with
Serve neat at cellar temperature, around 60 to 65 degrees, in a small tulip glass or a shot glass if you prefer. A splash of cool water opens the plum and softens the heat. Sip slowly, it is strong. Keep the bottle in the freezer if you like it colder, but never over ice.
