Nose
Cut grass and lime zest first, then green apple skin and a wet stone note underneath. Clean and direct, no oak, nothing heavy.
Palate
Light bodied and brisk. Citrus leads, lemon and grapefruit, with green apple through the middle and a chalky mineral streak. Acidity is firm but rounded, not biting. Dry throughout.
Finish
Snaps shut cleanly, medium short, leaving lime and a faint saline mineral trace that keeps you reaching back for the glass.
How to serve and what to pour it with
Serve well chilled, around 45 to 50 degrees, in a standard white wine glass, not a tiny tumbler. Pull it from the fridge about ten minutes before pouring so the fruit opens up. No decanting needed. A splash of cold water is fine if it tastes too tight. Finish the bottle the day you open it.
