Nose
Dark plum and blackberry first, then dried thyme and rosemary rising up, with a faint warm earth note underneath. Opens with a few minutes of air.
Palate
Medium to full bodied, generous and rounded. Ripe plum and black cherry coat the tongue, garrigue herbs thread through the middle, and firm tannins grip without biting. Dry throughout, with a savory, dusty edge.
Finish
Long and earthy, tannins easing slowly, leaving plum skin and dried herb notes behind.
How to serve and what to pour it with
Serve at cool room temperature, around 62 to 65 degrees, in a wide bowl glass so the garrigue aromas have room. Give it 20 to 30 minutes of air in a decanter or a big pour in the glass before you drink it. A young bottle benefits most. Keep the rest corked in a cool spot for two or three days.
